Easy Grilled Chicken Breast

It's grilling season and I fire up the little Weber at least twice a week.  On my most recent outing I decided to keep it simple and grill some bone-in, skin on chicken breast.  I used a simple spice rub and finished it with my homemade barbecue sauce to create a true American classic.  



Ingredients:
3-4 bone in, skin on chicken breast
barbecue sauce


Spice Rub:

2 tablespoons garlic powder
1 tablespoon ground cumin
1 tablespoon ground coriander 
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon fresh ground black pepper
1 teaspoon cayenne pepper


For the spice rub add all the ingredients in a bowl and stir to combine.


With kitchen shears, trim chicken breast of excess skin and rib bones.  I use the chicken breast with the skin on and bone in because I find it helps prevent the chicken from drying out while grilling. 
Coat with olive oil and season all sides liberally with the spice rub.  Pull back skin and season, placing the skin back over.  
Prepare grill for indirect grilling.  
Grill skin side down over direct heat for 4 to 5 min or until skin is beginning to char. Flip over and grill over indirect heat, covered for 20-25 minutes or until chicken is cooked and juices run clear.  
Brush with barbecue sauce during the last 5 to 10 minutes.  
Remove from heat and cover with foil.  Let rest 5 minutes before serving.

There you have it, a simple and quick weekend dinner.
